Gluten Free Chocolate Chip Cookies

Ingredients
  • 1/2 Cup of 100% Pure Yacon Syrup or 1/4 Sukrin Gold
  • 1/2 cup of melted coconut oil
  • 2 1/2 cups of blanched almond flour
  • 1 tablespoon vanilla extract
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon sea salt
  • 1/2 cup chocolate chips or chunks
Instructions
  1. Pre-heat oven to 350
  2. Whisk dry ingredients in a large bowl-We love our new La Creuset Whisk!
  3. Stir in wet ingredients
  4. I like to use to my hands to thoroughly combine the ingredients when it comes to working with almond flour
  5. On a non stick baking mat, or parchment-form small 1 inch balls of dough
  6. Using the back of a coconut oil coated spoon, gently pres the cookies down
  7. Bake for 8-12 minutes
  8. Cool for at least 15 minutes and serve
