Mint Protein Bars {Paleo, Vegan, No Bake}

Ingredients
  • 1 cup brazil nuts 125 gms or nuts of choice
  • 1/2 cup Coconut Chips 25 gms or desiccated coconut
  • 3 Tbsp Yacon Syrup or Raw Honey
  • 3 Tbsp Pea Protein powder or Protein of choice
  • 1.5 Tbsp Wheatgrass Powder
  • 1 tsp Peppermint Essence (optional)
  • 6 Tbsp Filtered water
  • A Large pinch Himalayan Pink Salt
  • 25 gms Raw Chocolate or Dark Chocolate of choice (optional)
Instructions
  1. In a food processor add the brazil nuts and coconut chip and process till they resemble fine crumbs. Add the rest of the ingredients at this point except the water, peppermint essence and the chocolate.
  2. Once it is well combined, add half the water and half the amount of peppermint essence and blitz till combined. If you prefer to have a stronger peppermint flavour add the rest of the peppermint essence. Slowly keep adding the water a little at a time. You will know if it ready when it starts forming into a ball.
  3. If you do not have a food processor. Then grind the brazil nuts and coconut chips into a fine powder and then mix int the rest of the ingredients by hand following the method stated above.
  4. Line a rectangle tray or box with baking paper and press down the green protein mixture into an even layer. It should be 1 inch in thickness. Place in your freezer for 1 hour to harden a bit. Then cut into rectangle bars.
  5. Melt the raw chocolate or dark chocolate of choice and drizzle over the frozen bars or dip the bars into the chocolate. Make a mess and have some fun! Store in the freezer or fridge.
