Vegan Sweet Potato Waffles

Ingredients
  • 1 cup of cooked sweet potato
  • 1 banana
  • 1 cup gluten-free old fashioned oats
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1 Tbsp cinnamon
  • 1/2 cup almond milk
  • 1 Tbsp Yacon syrup or any other liquid sweetener
  • Powdered sugar
  • Banana slices
  • Maple syrup
Instructions
  1. Bake sweet potatoes in the oven at 400F for 30-40 minutes or until tender.
  2. Preheat waffle skillet.
  3. In your blender, add in baked sweet potatoes, banana, oats, baking powder, salt, cinnamon, almond milk and yacon syrup.
  4. Blend in high-speed blender for 3 minutes or until oats are fully blended and ingredients are well incorporated.
  5. Grease waffles iron skillet and add in batter. Allow to cook for 3-4 minutes or until desired crispness.
  6. Top off with powdered sugar, maple syrup and fresh banana slices.

Notes:

To make these waffles vegan, you can simply use a banana in the recipe as a binding agent. If you don't have a banana or don't like banana (and aren't vegan) you can use an egg in the recipe instead! The options are endless.
